Vegan Herbal Brownies
(Gluten Free)
These brownies are moist and luscious.
No one will know, unless you tell them, that they are made with black beans.
Recipe provided by one of my Awesome Herbal Teachers, Madelon Hope. Madelon is the owner and director of the Boston School of Herbal Studies in Arlington, MA.

Vegan Herbal Brownies (Gluten Free)
3 cups organic black beans - slightly mashed
The black beans add protein and lots of fiber which help to prevent
blood sugar spikes.
Egg Substitute (directions are below) or 2 large eggs
1/2 cup raw honey (or a variation with 1/4 cup honey and a half cup of
chopped dates)
1/3 cup coconut oil (liquid)
Goji berries to taste
Combine the following dry ingredients and then blend into the wet ingredients.
1/2 cup raw cacao powder
4 tablespoons reishi powder
(Reishi is a powerful medicinal mushroom known for its immune enhancing actions. You can find powdered reishi online at Mushroom Harvest at a reasonable price.)
2 tablespoons tapioca starch (I used a heaping tablespoon of Kudzu dissolved
in just enough water to make a paste)
1 teaspoon cinnamon
1/2 teaspoon Himalayan pink salt (or sea salt)
1 teaspoon baking soda
Egg Substitute
Boil 1 tablespoon flax seeds in one cup of water until reduced to 3/4 cup.
Chill before using 1/4 cup for each egg.
Bake at 350 degrees for about 40 minutes.
I found that the center was still too moist after 40 minutes and so I actually
bake the brownies for a bit over an hour.
Enjoy!
Thank you Madelon for this yummy and super healthy recipe.
I have personally tried these brownies and they are really delicious.
